I usually enjoy the "burn your pallet off" type of spicy. I find however that as my tolerance for spiciness has increased over the years, the amount of spicy required to overpower a dish in my taste has equally increased. Meaning I'm stuck in a loop of having to increase spiciness in order to feel any heat, but then I get accustomed to thst new level of heat and have to increase it even more, etc. So for instance, I'll add habanero to guacamole and what I'll taste will be guacamole with a little kick, whereas my friends will just taste their tongues melting... More guac for me I guess 🤷‍♂️

 
I like spice - some heat is generally always nice. I think it's always a challenge though when you go to a new restaurant because spice levels are so subjective and also because a lot definitely profile you, let's be real. No one looks at paper white 5'3" me and thinks "oh, that girl can handle spicy food". I appreciate the gesture because it's well meant but I'm always a little sad when I ask for spice and it doesn't arrive.

On a separate note, holy hell can Indian/Caribbean food be a whole 'nother level sometimes. Not generally the food itself but the sauces they make. I had a good friend from Trinidad whose mom sent him sauces from back home and he brought them to work for some of us to try. There were three of them and I remember he asked me afterwards what I thought of them. I replied "well, the first one was nice.... but it also singed my tastebuds so I have no idea how the other two were". He just laughed.
