Both are great. Thin noodles are great with thicker broths, like in Tonkotsu ramen. While thicker noodles are great in more refreshing broths or Chinese Dao Xiao Mien.

Tbh I love pasta in pretty much every shape and form, but if I had to choose I'd say I generally prefer thicker noodles.
