for condiments i generally go with ketchup and mustard. no mayo pls.

Different mustard for different foods.  I said American mustard is my favourite because I have a craving for a hotdog right now, however if I'm making a nice sauce to go on some beef then it must be a wholegrain type.  Dijon mustard when making mayonnaise and English mustard on cold meats.  Really a favourite mustard is peculiar to the circumstances.
